Chocolate Date Balls

Ingredients
  

  • 2 cups dates deseeded
  • 1 cup almonds, cashews, walnuts or nuts of choice
  • 1/2 cup desiccated or shredded coconut plus more for rolling
  • 1/4 cup cocoa powder
  • 1 teaspoon vanilla extract
  • 1 pinch salt

Method
 

  1. Gather all your ingredients. Make sure your dates are pitted and your nuts are roughly chopped if they are larger pieces.
  2. Place your choice of nuts (almonds, cashews, walnuts, or a mix) in the food processor. Pulse them until they are finely chopped, but be careful not to turn them into nut butter!
  3. Add the deseeded dates to the processor along with the cocoa powder, vanilla extract, and a pinch of salt. Process until the mixture is well combined and starts to stick together. You may need to scrape down the sides a couple of times.
  4. Add the desiccated or shredded coconut to the mixture and pulse a few more times until everything is well blended.
  5. Use your hands to scoop out small portions of the mixture and roll them into balls, about one inch in diameter. If the mixture is too sticky, wet your hands slightly to make rolling easier.
  6. Roll the balls in additional shredded coconut to give them a beautiful finish and enhance the flavors.
  7. Place the rolled Chocolate Date Balls on a baking sheet lined with parchment paper and refrigerate for at least 30 minutes to set. Once chilled, they’re ready to enjoy!

Notes

  • Store in an airtight container in the refrigerator for up to 2 weeks.
  • Freeze for longer storage up to 3 months.
  • Thaw in the fridge for a quick snack or dessert.
