Ingredients
  

For the Wontons:
  • 1/2 lb ground chicken
  • 1/4 lb shrimp, chopped into small pieces
  • 1 stalk scallion, cut into rings
  • 1/2 teaspoon cornstarch
  • 1/4 teaspoon salt
  • 1 dash fish sauce, optional
  • 1/2 teaspoon sesame oil
  • 3 dashes ground white pepper
  • 12 pieces wonton wrappers
  • Water, for sealing
  • Oil, for deep frying
  • 3 tablespoons Thai sweet chili sauce
  • 2 teaspoons lime juice
  • 1 tablespoon cilantro leaves, chopped
  • 1 pinch white sesame seeds for garnish

Method
 

Instructions:
  1. Step 1: Prepare the Filling - In a mixing bowl, combine the ground chicken, chopped shrimp, scallion rings, cornstarch, salt, fish sauce (if using), sesame oil, and white pepper. Mix well until all ingredients are evenly incorporated.
  2. Step 2: Assemble the Wontons - Lay out your wonton wrappers on a clean surface. Place about a teaspoon of filling in the center of each wrapper. Moisten the edges of the wrapper with water and fold to seal tightly.
  3. Step 3: Heat the Oil - In a deep frying pan, heat oil over medium-high heat. Test if the oil is ready by dropping a small piece of wonton wrapper into it; if it sizzles, it's time to fry!
  4. Step 4: Fry the Wontons - Carefully add the wontons in batches, frying until golden brown and crispy, about 3-4 minutes. Use a slotted spoon to remove and drain on paper towels.
  5. Step 5: Prepare the Dipping Sauce - In a small bowl, mix the Thai sweet chili sauce with lime juice and chopped cilantro. Serve with the wontons.

Notes

  • For a lighter version, substitute ground turkey for chicken.
  • Use gluten-free wonton wrappers for a gluten-free option.
  • Store leftover fried wontons in an airtight container for up to 2 days.
