- Step 1: Prepare the Filling - In a mixing bowl, combine the ground chicken, chopped shrimp, scallion rings, cornstarch, salt, fish sauce (if using), sesame oil, and white pepper. Mix well until all ingredients are evenly incorporated.
- Step 2: Assemble the Wontons - Lay out your wonton wrappers on a clean surface. Place about a teaspoon of filling in the center of each wrapper. Moisten the edges of the wrapper with water and fold to seal tightly.
- Step 3: Heat the Oil - In a deep frying pan, heat oil over medium-high heat. Test if the oil is ready by dropping a small piece of wonton wrapper into it; if it sizzles, it's time to fry!
- Step 4: Fry the Wontons - Carefully add the wontons in batches, frying until golden brown and crispy, about 3-4 minutes. Use a slotted spoon to remove and drain on paper towels.
- Step 5: Prepare the Dipping Sauce - In a small bowl, mix the Thai sweet chili sauce with lime juice and chopped cilantro. Serve with the wontons.
