  • 15 ounces red enchilada sauce divided
  • 1 ounce taco seasoning
  • 1 cup chopped cilantro
  • 18 pieces flour tortillas 6-inch
  • 3 cups shredded Mexican cheese blend divided
  • Chopped tomatoes for garnish
  • Sliced avocado for garnish
  • Crumbled Cotija cheese for garnish
  • Fresh cilantro for garnish

Method
 

  1. Step 1: Preheat the Oven: Start by preheating your oven to 375°F (190°C). This will ensure that your casserole cooks evenly and thoroughly.
  2. Step 2: Prepare the Chicken Mixture: In a mixing bowl, combine the shredded cooked chicken, 1 cup of the red enchilada sauce, taco seasoning, and chopped cilantro. Stir until everything is well mixed.
  3. Step 3: Assemble the Casserole: Spread a thin layer of the remaining red enchilada sauce on the bottom of your baking dish. Lay down 6 of the flour tortillas, overlapping them slightly to cover the bottom. Next, spoon half of the chicken mixture over the tortillas, followed by 1 cup of shredded Mexican cheese. Repeat this layering process with another set of tortillas, the remaining chicken mixture, and another 1 cup of cheese. Finally, top the casserole with the last 6 tortillas and the remaining 1 cup of cheese.
  4. Step 4: Bake: Cover the baking dish with aluminum foil and bake in your preheated oven for 20 minutes. After this time, remove the foil and bake for an additional 10-15 minutes until the cheese is bubbly and golden brown.
  5. Step 5: Garnish and Serve: Once out of the oven, let the casserole cool for a few minutes. Then, garnish with chopped tomatoes, sliced avocado, crumbled Cotija cheese, and fresh cilantro. Serve warm and enjoy the comforting flavors of your Chicken Tortilla Casserole!
