Ingredients
  

  • 2 cups Flour
  • 1 3/4 cups Quick-cooking oats
  • 1 1/4 cups Brown sugar
  • 1 teaspoon Baking soda
  • 1/4 teaspoon Salt
  • 1 1/4 cups Unsalted butter softened
  • 1 1/2 cups Chocolate chips divided use
  • 1/4 cup Chopped pecans divided use
  • 1 1/2 cups Salted caramel sauce (homemade or store bought)
  • 2 1/2 tablespoons Flour

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Grease your 9x13 inch baking pan with butter or line it with parchment paper.
  3. In a large mixing bowl, whisk together flour, oats, brown sugar, baking soda, and salt until well combined.
  4. Cream together unsalted butter until light and fluffy.
  5. Gradually add the dry ingredient mixture to the creamed butter, mixing until just combined.
  6. Fold in 1 cup of chocolate chips and 2 tablespoons of chopped pecans into the mixture.
  7. Spread half of the oatmeal mixture into the prepared baking pan, pressing it down evenly.
  8. Pour salted caramel sauce over the layer of oats and sprinkle remaining chocolate chips and pecans on top.
  9. Crumble the remaining oat mixture over the caramel layer.
  10. Bake in the preheated oven for 25-30 minutes until golden brown and bubbling.
  11. Allow to cool completely before cutting into squares.

Notes

  • Ensure your caramel sauce is ready before starting the recipe.
  • For a nut-free version, simply omit the pecans.
  • These bars can be made a day in advance and stored covered.
  • They freeze well; wrap tightly and store for up to 3 months.
  • If too crumbly, add a bit more melted butter to the oat mixture.
