- Preheat your oven to 400°F (200°C) to ensure crispy taquitos.
- In a mixing bowl, combine the shredded chicken, cream cheese, buffalo sauce, cheddar cheese, and blue cheese. Mix until well incorporated and creamy.
- Take a fajita-sized flour tortilla and place about 2-3 tablespoons of the chicken mixture in the center. Roll tightly, tucking in the sides to create a secure taquito. Repeat with all tortillas.
- Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper. Lightly spray or brush the tops with cooking spray or oil. Bake for about 20-25 minutes, or until golden brown and crispy.
- Once baked, remove from the oven and allow to cool for a minute. Serve with dipping sauces like ranch or extra buffalo sauce.
