Ingredients
  

Filling:
  • 2 cups shredded cooked chicken Use rotisserie chicken for convenience!
  • 4 oz cream cheese soften it to make mixing easier
  • 2 tbsp buffalo sauce adjust based on spice preference
  • 1/2 cup shredded cheddar cheese adds a rich flavor
  • 1/4 cup crumbled blue cheese optional, for a nice tang
For the Taquitos:
  • 10 pieces fajita-sized flour tortillas these will hold your filling perfectly

Method
 

Instructions:
  1. Preheat your oven to 400°F (200°C) to ensure crispy taquitos.
  2. In a mixing bowl, combine the shredded chicken, cream cheese, buffalo sauce, cheddar cheese, and blue cheese. Mix until well incorporated and creamy.
  3. Take a fajita-sized flour tortilla and place about 2-3 tablespoons of the chicken mixture in the center. Roll tightly, tucking in the sides to create a secure taquito. Repeat with all tortillas.
  4. Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper. Lightly spray or brush the tops with cooking spray or oil. Bake for about 20-25 minutes, or until golden brown and crispy.
  5. Once baked, remove from the oven and allow to cool for a minute. Serve with dipping sauces like ranch or extra buffalo sauce.

Notes

  • For a healthier option, use whole wheat tortillas.
  • Try adding diced jalapeños to the filling for extra heat!
  • These taquitos freeze well uncooked; bake straight from the freezer when ready to eat.
