Ingredients
  

  • 4 cups Riced Broccoli fresh or frozen
  • 1 large Egg
  • ½ cup Shredded Cheddar Cheese
  • ½ cup Shredded Parmesan Cheese
  • ½ cup All-Purpose Flour
  • ½ cup Grated Onion
  • 1 clove Garlic minced
  • ½ teaspoon Salt
  • ½ teaspoon Ground Pepper

Method
 

  1. Start by ricing your broccoli. If you're using fresh broccoli, chop it into small pieces and pulse it in a food processor until it resembles rice. If you're using frozen broccoli, simply thaw it and drain any excess moisture.
  2. In a large mixing bowl, combine the riced broccoli, grated onion, minced garlic, shredded cheddar, shredded parmesan, egg, flour, salt, and pepper. Mix until everything is well incorporated.
  3. Using a spoon or an ice cream scoop, portion out the mixture and shape it into small tot-shaped bites. Place them on the prepared baking sheet, leaving a little space between each one.
  4. Preheat your oven to 400°F (200°C) and bake the Broccoli Tots for about 20-25 minutes, or until they are golden brown and crispy.
  5. Once they are done baking, remove the tots from the oven and let them cool slightly before serving. Enjoy them warm with your favorite dipping sauce!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • To reheat, bake in the oven at 350°F (175°C) for about 10 minutes.
  • Freeze uncooked tots on a baking sheet, then transfer to a freezer bag for later baking.
