Ingredients
  

  • 1 pound ground sausage (or breakfast sausage)
  • 1/2 cup onion (chopped)
  • 1/2 cup red bell pepper (chopped)
  • 1/2 cup green bell pepper (chopped)
  • 3 large eggs (slightly beaten)
  • 3 cups cooked white rice (day-old works best)
  • 2-3 tablespoons soy sauce (adjust to taste)
  • green onions (chopped)
  • everything bagel seasoning

Equipment

  • Large skillet or wok
  • Spatula or wooden spoon
  • Measuring cups and spoons
  • Cutting board and knife

Method
 

  1. In a large skillet or wok over medium heat, add the ground sausage. Cook until browned and fully cooked through, breaking it apart with a spatula. This should take about 5-7 minutes. Once cooked, remove the sausage from the pan and set it aside.
  2. In the same skillet, add the chopped onions and bell peppers. Sauté for about 3-4 minutes, or until the vegetables are tender and fragrant.
  3. Push the cooked vegetables to the side of the pan and pour the slightly beaten eggs into the empty space. Scramble the eggs until just set, then mix them with the vegetables.
  4. Add the cooked white rice to the pan, breaking up any clumps with your spatula. Stir to combine all the ingredients thoroughly.
  5. Drizzle the soy sauce over the rice mixture, stirring well to distribute the flavor evenly. Taste and adjust the seasoning as needed.
  6. Return the cooked sausage to the pan and mix everything together. Allow it to cook for another 2-3 minutes, then garnish with chopped green onions and a sprinkle of everything bagel seasoning.

Notes

  • Use day-old rice for the best texture.
  • Customize with your favorite vegetables like carrots or peas.
  • Store leftovers in an airtight container for up to 3 days.
