In a large skillet or wok over medium heat, add the ground sausage. Cook until browned and fully cooked through, breaking it apart with a spatula. This should take about 5-7 minutes. Once cooked, remove the sausage from the pan and set it aside.
In the same skillet, add the chopped onions and bell peppers. Sauté for about 3-4 minutes, or until the vegetables are tender and fragrant.
Push the cooked vegetables to the side of the pan and pour the slightly beaten eggs into the empty space. Scramble the eggs until just set, then mix them with the vegetables.
Add the cooked white rice to the pan, breaking up any clumps with your spatula. Stir to combine all the ingredients thoroughly.
Drizzle the soy sauce over the rice mixture, stirring well to distribute the flavor evenly. Taste and adjust the seasoning as needed.
Return the cooked sausage to the pan and mix everything together. Allow it to cook for another 2-3 minutes, then garnish with chopped green onions and a sprinkle of everything bagel seasoning.
