Bonefish Grill Bang-Bang Shrimp: From Prep to Plate
  1. Step 1: Prepare the Shrimp
    Start by rinsing the shrimp under cold water and patting them dry with paper towels. This step helps the batter adhere better.
  2. Step 2: Make the Batter
    In a mixing bowl, combine the skim milk, egg whites, cornstarch, flour, and hot sauce. Whisk until the batter is smooth and well blended.
  3. Step 3: Coat the Shrimp
    Dip each shrimp into the batter, ensuring it is thoroughly coated. Allow any excess batter to drip off, then roll the shrimp in panko breadcrumbs, pressing gently to adhere.
  4. Step 4: Heat the Oil
    In a frying pan or deep fryer, heat oil to 350°F (175°C). If you don’t have a thermometer, you can test the oil by dropping in a small piece of bread; it should sizzle and turn golden in about 30 seconds.
  5. Step 5: Fry the Shrimp
    Carefully add the coated shrimp to the hot oil in batches, ensuring not to overcrowd the pan. Fry for 2-3 minutes or until golden brown and crispy. Remove from the oil and place on paper towels to drain excess oil.
