Method
 

  1. Step 1: Preheat the Skillet - Begin by heating a large skillet over medium heat. This will ensure that your quesadillas get crispy and golden.
  2. Step 2: Prepare the Filling - In a mixing bowl, combine the drained black beans, southwestern corn, roasted red bell pepper, chopped cilantro, shredded sharp Cheddar cheese, and taco seasoning. Mix until everything is evenly coated.
  3. Step 3: Assemble the Quesadilla - Place one tortilla in the skillet. Spread a portion of the filling mixture evenly over half of the tortilla. On the other half, spread a thin layer of Laughing Cow cheese for extra creaminess.
  4. Step 4: Cook Until Golden - Fold the tortilla in half, pressing down gently. Cook for about 3-4 minutes on one side, or until golden brown and the cheese is melted. Carefully flip and cook the other side for an additional 3-4 minutes.
  5. Step 5: Repeat the Process - Remove the cooked quesadilla from the skillet and keep it warm in a low oven while you repeat the process with the remaining tortillas and filling.
  6. Step 6: Slice and Serve - Once all quesadillas are cooked, slice them into wedges and serve with your choice of toppings and chili-lime dipping sauce for an extra zing!

Notes

  • Make the filling a day in advance and store it in the refrigerator.
  • You can assemble the quesadillas and store them in the fridge. Cook them right before serving.
  • Quesadillas can be frozen before cooking. Just place parchment paper between them and store in a freezer-safe bag.
