Ingredients
  

For the BBQ Chicken Bake:
  • 1 large onion sliced
  • 2 pounds chicken breast cut into thin filets
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1/2 teaspoon garlic powder
  • 1/2 cup BBQ sauce
  • 1 cup shredded cheddar cheese
  • to taste diced green onion (for garnish)
  • to taste chopped cilantro (for garnish)

Method
 

Cooking Steps:
  1. Start by cutting the large onion into thin slices. Then, slice the chicken breast into thin filets.
  2. In a large skillet over medium heat, add a splash of oil and sauté the sliced onions until they become translucent and fragrant, about 5 minutes.
  3. Add the chicken filets to the skillet with the onions. Season with salt, pepper, and garlic powder. Cook until the chicken is no longer pink, approximately 7-10 minutes.
  4. Once the chicken is cooked through, pour in the BBQ sauce. Stir to thoroughly coat the chicken and onions. Let it simmer for an additional 5 minutes.
  5. Transfer the BBQ chicken and onion mixture into a baking dish. Spread it out evenly and top with shredded cheddar cheese.
  6. Preheat your oven to 375°F (190°C) and bake the dish for about 20 minutes, or until the cheese is bubbly and golden brown.
  7. Once out of the oven, let it cool for a few minutes. Garnish with diced green onions and chopped cilantro before serving.

Notes

  • Feel free to add your favorite vegetables to the mix for extra nutrition.
  • Leftovers can be stored in the fridge for up to 3 days.
