Cooking Steps:
- Start by cutting the large onion into thin slices. Then, slice the chicken breast into thin filets.
- In a large skillet over medium heat, add a splash of oil and sauté the sliced onions until they become translucent and fragrant, about 5 minutes.
- Add the chicken filets to the skillet with the onions. Season with salt, pepper, and garlic powder. Cook until the chicken is no longer pink, approximately 7-10 minutes.
- Once the chicken is cooked through, pour in the BBQ sauce. Stir to thoroughly coat the chicken and onions. Let it simmer for an additional 5 minutes.
- Transfer the BBQ chicken and onion mixture into a baking dish. Spread it out evenly and top with shredded cheddar cheese.
- Preheat your oven to 375°F (190°C) and bake the dish for about 20 minutes, or until the cheese is bubbly and golden brown.
- Once out of the oven, let it cool for a few minutes. Garnish with diced green onions and chopped cilantro before serving.
