Ingredients
  

For the Cupcakes:
  • 1 cup cake flour plus 2 tablespoons
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon fine salt

  • ¾ cup unsalted butter softened
  • ½ cup granulated sugar
  • ½ cup light brown sugar
  • 1 cup sour cream
  • 2 teaspoons vanilla extract
  • 2 large eggs
  • 2 larger ripe bananas peeled and mashed
  • Cream cheese frosting for topping
  • Chopped pecans for garnish

Method
 

Instructions:
  1. Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C). This ensures that your cupcakes will bake evenly.
  2. Step 2: Prepare the Cupcake Pan - Line the cupcake pan with cupcake liners. This will make removing the cupcakes easier and help with clean-up.
  3. Step 3: Mix Dry Ingredients - In a medium bowl, whisk together the cake flour, baking powder, baking soda, fine salt, and ground cinnamon. Set this mixture aside.
  4. Step 4: Cream the Butter and Sugars - In a large mixing bowl, use an electric mixer to beat the softened butter, granulated sugar, and light brown sugar together until the mixture is light and fluffy. This should take about 2-3 minutes.
  5. Step 5: Add Wet Ingredients - Add the sour cream, vanilla extract, and eggs to the butter and sugar mixture. Beat until everything is well combined.
  6. Step 6: Incorporate Bananas - Fold in the mashed bananas gently using a spatula until evenly distributed throughout the batter.
  7. Step 7: Combine Dry and Wet Ingredients - Gradually add the dry ingredients to the wet mixture. Stir until just combined. Be careful not to overmix, as this can result in dense cupcakes.
  8. Step 8: Fill the Cupcake Liners - Spoon the batter into the prepared cupcake liners, filling each about two-thirds full. This will give them room to rise without overflowing.
