Course: Salad
Cuisine: Middle Eastern

Ingredients

For the Salad:
  • 1 can black beans rinsed well and drained
  • 1 can garbanzo beans rinsed well and drained
  • 1 cup chopped green onion (or less, to taste)
  • 2 cups chopped fresh tomato (about 6 small tomatoes)
  • 1 cup finely chopped fresh parsley

Equipment

  • Mixing Bowl
  • Cutting board
  • Knife
  • Measuring cups

Method

Instructions:
  1. Begin by rinsing and draining the black beans and garbanzo beans in a colander. This step is crucial to remove excess sodium and any preservatives. Next, chop the green onions, fresh tomatoes, and parsley. Make sure to finely chop the parsley to release its aromatic flavors.
  2. In a large mixing bowl, combine the rinsed black beans and garbanzo beans. These legumes form the hearty base of your Balela salad.
  3. Add the chopped green onions and fresh tomatoes to the bowl. The tomatoes will provide a juicy texture, while the green onions add a mild onion flavor that complements the beans.
  4. Next, fold in the finely chopped parsley. This herb not only enhances the flavor but also adds a burst of color to the salad.
  5. Now, it’s time to season your Balela Salad. Add salt and pepper to taste. You can also drizzle some olive oil and lemon juice over the salad for a refreshing zing. Toss everything gently to combine, ensuring that all ingredients are coated with the dressing.
  6. For the best flavor, let the salad chill in the fridge for at least 30 minutes. This resting time allows the flavors to meld beautifully. Serve the salad cold or at room temperature, and enjoy!

Notes

  • Store leftovers in an airtight container in the refrigerator for up to 3 days.
  • For best flavor, enjoy the salad within 24 hours of making it.
  • If the salad sits for a while, the ingredients may release water; simply stir before serving.
