  • 2 lbs boneless, skinless chicken breasts
  • 2 tbsp olive oil divided
  • Salt and pepper to taste
  • Cooking spray
  • ½ cup yellow mustard
  • ½ cup stone-ground mustard
  • ½ cup honey
  • 2 tbsp Italian dressing
  • 1 tsp garlic powder
  • 1 tsp dried oregano
  • Fresh parsley chopped, for garnish

Method
 

  1. Begin by preheating your oven to 375°F (190°C). This ensures that your chicken will cook evenly and develop that beautiful glaze.
  2. In a mixing bowl, combine the yellow mustard, stone-ground mustard, honey, Italian dressing, garlic powder, and dried oregano. Whisk until fully combined.
  3. Pat the chicken breasts dry with paper towels and season them with salt and pepper on both sides.
  4. In a baking dish, spray with cooking spray to prevent sticking. Place the chicken breasts inside and pour the marinade over the top. Ensure that each piece is well coated for maximum flavor.
  5. Cover the baking dish with aluminum foil and bake in the preheated oven for 25 minutes. After 25 minutes, remove the foil and continue baking for an additional 15-20 minutes, or until the chicken is cooked through and has reached an internal temperature of 165°F (75°C).
  6. Once the chicken is done, remove it from the oven and let it rest for a few minutes. Garnish with fresh chopped parsley before serving.
