Ingredients
  

For the Chicken Wings:
  • 600 g chicken wings
  • 1 tsp paprika
  • 1 tsp cumin
  • 30 ml olive oil for roasting
For the Cajun Roasted Potatoes:
  • 600 g potatoes chopped into bite-sized pieces
  • 1 tsp Cajun seasoning
For the Spicy Pineapple Salsa:
  • 400 g pineapple diced
  • 5-6 tomatoes juicy, diced
  • 1 bell pepper chopped
  • 40 g pickled jalapeños chopped
  • 2 garlic cloves minced
  • 1 small onion chopped

Method
 

Instructions:
  1. Step 1: Preheat your oven to 200°C (400°F). Rinse the chicken wings under cold water and pat them dry with paper towels.
  2. Step 2: In a mixing bowl, combine the chicken wings with salt, pepper, paprika, and cumin. Drizzle with olive oil and toss until evenly coated.
  3. Step 3: Arrange the wings in a single layer on a baking sheet. Bake for about 25-30 minutes, turning them halfway through.
  4. Step 4: While the wings are baking, wash and chop the potatoes. Toss them with olive oil, Cajun seasoning, salt, and pepper in a separate bowl.
  5. Step 5: Spread the seasoned potatoes on another baking sheet and roast for about 20-25 minutes until tender and golden brown.
  6. Step 6: For the salsa, dice the pineapple, tomatoes, bell pepper, and onion. Mince the garlic and chop the jalapeños. Combine all ingredients.
  7. Step 7: Arrange the wings and potatoes on a serving platter. Serve alongside the spicy pineapple salsa for dipping.
