Ingredients
  

  • 3 cups shredded, roasted chicken
  • 1 teaspoon ground cumin
  • 1 teaspoon Kosher salt
  • 1 teaspoon garlic powder
  • 1 cup shredded Mexican cheese
  • 12 pieces corn tortillas
  • Cooking spray
  • Topping options: guacamole, sour cream, diced tomatoes, salsa (as desired)

Method
 

  1. Step 1: Preheat your oven to 400°F (200°C).
  2. Step 2: In a mixing bowl, combine the shredded chicken, ground cumin, Kosher salt, garlic powder, and shredded Mexican cheese. Mix well.
  3. Step 3: Warm the corn tortillas slightly in the microwave for about 30 seconds.
  4. Step 4: Take a tortilla and place about 2 tablespoons of the chicken mixture on one end. Roll it tightly.
  5. Step 5: Place the rolled taquitos seam-side down on a baking sheet lined with parchment paper.
  6. Step 6: Lightly spray the taquitos with cooking spray and bake for 20-25 minutes.
  7. Step 7: Serve with toppings such as guacamole, sour cream, diced tomatoes, or salsa.
