Method
 

Steps:
  1. Step 1: Prepare the Sauce - Heat vegetable oil in a large skillet over medium heat. Whisk in all-purpose flour and stir for about 1 minute until golden brown. Gradually add water, stirring to combine. Add chili powder, paprika, and salt. Simmer for about 10 minutes until thickened.
  2. Step 2: Heat the Tortillas - In another skillet, heat a little vegetable oil over medium heat. Lightly fry each corn tortilla for about 30 seconds on each side until warm and pliable.
  3. Step 3: Assemble the Enchiladas - Place a tortilla on a flat surface, add a generous amount of shredded cheese and chopped onions if using. Roll tightly and place seam-side down in an oven-safe dish. Repeat for all tortillas.
  4. Step 4: Top with Sauce - Pour the prepared sauce evenly over the enchiladas, ensuring each is covered. Optionally, add more cheese on top.
  5. Step 5: Bake - Preheat oven to 350°F (175°C). Bake for about 20 minutes until cheese is melted and bubbly.
  6. Step 6: Serve and Enjoy! - Remove from oven, let cool for a few minutes, and serve warm garnished with additional onions.
