  • 2 pounds smoked herring
  • 1 small red onion sliced
  • 2 bell peppers cut into strips
  • 4 plum tomatoes cut into eights
  • 2 tablespoons vegetable oil
  • 1 cup tomato sauce
  • 1 teaspoon salt (or more, to taste)
  • Minced cilantro or parsley (optional)

Method
 

Preparation Steps:
  1. Begin by slicing the red onion and bell peppers. Cut the tomatoes into eights or halve the cherry tomatoes. This preparation will ensure that everything cooks evenly and allows the flavors to meld beautifully.
  2. In a large skillet, heat the vegetable oil over medium heat. Add the sliced red onion and sauté for about 3-4 minutes until it becomes translucent. Then, add the bell peppers and continue to cook for another 5 minutes, stirring occasionally, until they soften.
  3. Next, add the cut tomatoes to the skillet. Stir everything together, allowing the tomatoes to break down slightly and release their juices. This will create a flavorful base for your sauce.
  4. Now it's time to add the smoked herring. Gently fold the herring into the vegetable mixture, ensuring it gets coated with the tomatoes and onions. Cook for about 5 minutes, allowing the herring to heat through and absorb the flavors.
  5. Pour in the cup of tomato sauce and sprinkle the salt over the mix. Stir well to combine and bring the mixture to a gentle simmer. Let it cook for an additional 10-15 minutes, allowing the flavors to meld together.
  6. Once the sauce has thickened slightly and the herring is fully heated, remove the skillet from the heat. If desired, sprinkle minced cilantro or parsley on top for a fresh finish. Serve warm over rice, with crusty bread, or as is, and enjoy the delightful flavors of your Arenque Guisado!
