Ingredients

For the Cookies:
  • 1/2 cup butter (softened)
  • 10 tablespoons Monkfruit Sweetener (see notes)
  • 1/4 teaspoon kosher salt
  • 1 teaspoon vanilla extract
  • 3 tablespoons flaxseed meal
  • 2 1/2 cups almond flour

Equipment

  • Mixing Bowl
  • Measuring cups and spoons
  • Baking Sheet
  • Silicone spatula
  • Oven thermometer

Method

Baking Instructions
  1. Step 1: Preheat the Oven - Start by preheating your oven to 350°F (175°C). This ensures that your cookies bake evenly and come out perfectly golden.
  2. Step 2: Cream the Butter and Sweetener - In a large mixing bowl, combine the softened butter and Monkfruit Sweetener. Use a mixer or a spatula to cream them together until the mixture is light and fluffy.
  3. Step 3: Add the Wet Ingredients - Next, add the kosher salt, vanilla extract, and flaxseed meal to the butter mixture. Mix until everything is well combined.
  4. Step 4: Incorporate the Almond Flour - Gradually add the almond flour to the wet ingredients, mixing until a dough forms. The dough should be slightly sticky but manageable.
  5. Step 5: Scoop the Dough - Using a tablespoon or a cookie scoop, portion out the dough onto your prepared baking sheet. Make sure to leave enough space between each scoop, as the cookies will spread while baking.
  6. Step 6: Bake - Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are lightly golden. Keep an eye on them, as baking times can vary based on oven conditions.
  7. Step 7: Cool - Once baked, remove the cookies from the oven and let them cool on the baking sheet for about 5 minutes. Then, transfer them to a wire rack to cool completely.

Notes

  • Ensure butter is at room temperature for best results.
  • If the dough is too sticky, refrigerate for 10-15 minutes.
  • Store leftovers in an airtight container for freshness.
  • Experiment with different sweeteners if Monkfruit isn't available.
