Line a baking sheet with parchment paper.
In a large mixing bowl, combine almond butter, honey, egg, and vanilla extract. Mix until smooth.
Add baking soda, baking powder, and salt to the wet mixture. Stir until fully incorporated.
Fold in dark chocolate chips and shredded coconut (or chopped nuts).
Scoop dough onto the prepared baking sheet, leaving space between each cookie. Bake for about 10-12 minutes.
Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.
