Ingredients
  

  • 1 cup almond butter
  • 1/3 cup honey or 1/2 cup for a sweeter cookie
  • 1 large egg
  • 1 tablespoon vanilla extract
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1/2 cup dark chocolate chips
  • 2/3 cup unsweetened shredded coconut or chopped nuts

Method
 

  1. Preheat your oven to 350°F (175°C).
  2. Line a baking sheet with parchment paper.
  3. In a large mixing bowl, combine almond butter, honey, egg, and vanilla extract. Mix until smooth.
  4. Add baking soda, baking powder, and salt to the wet mixture. Stir until fully incorporated.
  5. Fold in dark chocolate chips and shredded coconut (or chopped nuts).
  6. Scoop dough onto the prepared baking sheet, leaving space between each cookie. Bake for about 10-12 minutes.
  7. Let cookies cool on the baking sheet for a few minutes before transferring them to a wire rack.

Notes

  • For a lower-sugar option, use maple syrup instead of honey.
  • Substitute dark chocolate chips with cacao nibs for a healthier fix.
