These Aebleskiver are the perfect weekend treat! Fluffy, crispy, and versatile, they can be filled with anything from fruit to chocolate!

Ingredients
  

  • 2 eggs eggs separated
  • 2 cups buttermilk
  • 2 cups all-purpose flour
  • 2 teaspoons baking powder
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 tablespoons sugar
  • 4 tablespoons melted butter

  • Aebleskiver pan
  • Mixing bowls
  • Whisk
  • Wooden skewers or chopsticks
  • Spatula

Method
 

  1. In a mixing bowl, separate the egg whites from the yolks. In another bowl, whisk together the egg yolks and buttermilk until well combined. In a separate bowl, mix the flour, baking powder, baking soda, salt, and sugar.
  2. Gradually add the dry ingredients to the buttermilk mixture, stirring until just combined. Do not overmix.
  3. In a clean bowl, whip the egg whites until they form stiff peaks. Gently fold the whipped egg whites into the batter, being careful not to deflate them.
  4. Preheat your aebleskiver pan over medium heat and lightly grease each well with melted butter.
  5. Spoon the batter into each well of the pan, filling them about ¾ full.
  6. If you’d like to add fillings, now is the time! You can use a dollop of jam, chocolate chips, or even pieces of fruit.
  7. Cook for about 2-3 minutes until the bottoms are golden brown. Use a skewer or chopstick to gently turn each aebleskiver.

Notes

  • Serve with syrup or powdered sugar for an extra touch.
  • Experiment with various fillings to find your favorite combination.
  • Leftover aebleskiver can be stored in the refrigerator and reheated in a toaster.
