Ingredients
  

  • 2 eggs Eggs
  • 1 cup Peanut butter creamy or crunchy
  • 1 cup Pure maple syrup
  • 1 cup Rolled oats
  • 1 tsp Baking soda
  • 1/2 tsp Ground cinnamon optional
  • 1/2 tsp Sea salt
  • 2/3 cup Chocolate chips optional

Method
 

  1. Preheat your oven to 350°F (175°C). This ensures that your cookies bake evenly.
  2. In a large mixing bowl, combine the peanut butter, maple syrup, and eggs. Use a whisk or a fork to mix until smooth and well combined.
  3. To the wet mixture, add the rolled oats, baking soda, cinnamon (if using), and sea salt. Stir until everything is well incorporated.
  4. If you’re using chocolate chips, fold them into the cookie dough until evenly distributed.
  5. Using a cookie scoop or spoon, drop rounded tablespoons of cookie dough onto a lined baking sheet, leaving space between each cookie. Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden.
